Rosemary

Not adding a sprig of rosemary dipped in olive oil when grilling fish is considered an inexcusable oversight in Dalmatian cuisine. The precious herb is used with sautéed dishes, meat, all types of roast and soft cheeses. A sprig or two of rosemary can always be found beneath the baking lid, in meat dishes or octopus dishes slowly cooked with potatoes and various vegetables under the iron bell.
